I love farro because of all the different ways you can serve it. It’s super easy and quick, and the possibilities are endless!
I get our farro at Trader Joe’s because it’s already prepped for cooking, so it cooks quickly, within ten minutes. If you get full farro, it can take much longer to cook and can have a tougher texture.
- 1 cup chicken broth
- 1/2 cup farro
- 1/4 cup tomato sauce
- 1 small shallot, diced
- 1/2 cup cherry tomatoes, halved
- 1 tsp minced garlic
- dash of salt + pepper
- Boil 1 cup broth and add 1/2 cup farro. Cover and simmer for ten minutes.
- In a small pan, saute shallot, cherry tomatoes + garlic.
- Add shallot + tomatoes to finished farro. Mix in tomato sauce. Season with salt + pepper. Serve.
It’s nothing special, but sometimes less is more. It’s a simple and quick recipe, and ensures the family will eat their grains! I can’t always get Lucy to eat farro, but with this recipe, my changes are much higher.
